Grilled Potato Bread


Method

-In a small bowl combine dry yeast in warm water, set aside for 10 minutes or until the yeast is dissolved.
-Combine mashed potato and onion, butter, sugar, salt and pepper in a medium size bowl.
-Add the yeast and 2 cup of flour to the potato mixture and stir until combined.
-Cover with a towel and set aside in a warm place for 45 minutes or until the size doubles.
-Gradually knead the dough add the remaining flour and continue kneading until the dough is firm.
-Cover and set aside in a warm place for another 30 minutes.
-Brush two loaf pans with oil; divide the dough into two equal parts and place in the loaf pans making sure that the dough does not exceed half the depth of the pan.
-Combine the egg and water and brush the top of the dough with the mixture.
-Cover the pans and set aside for 30 minutes and let rise.
-Bake on the middle shelf in a 350F degree oven 25 minutes until it is golden.
-Remove from oven; let it cool and then slice and brush slices with olive oil and grill on both sides.

1 Tablespoon dry yeast
1/2 Cup warm water
2 Cup baked potato, mashed without skin
2 Medium size onions, diced and sautéed in olive oil until golden
2 Tablespoon butter
2 Tablespoon sugar
1 Tablespoon salt
1 Tablespoon crushed black pepper
6 1/2 Cup all purpose flour
1 Egg
1 Tablespoon water
Olive oil
