Tomato Sauce for Veal Chops


- Cut vegetables into medium chunks.
- Put vegetables in a pan, over medium heat, add the tomatoes, let it simmer for 1/2 an hour, stirring frequently, until well cooked.
- Let it cool, blend vegetable mixture, put it back in the same pan.
- Add olive oil, season with salt and pepper, let it simmer for 15 minutes, stirring frequently.
- Veal chops or any other meat cuts, could be cooked in this sauce, or could be served on the side.



1 carrot
10 parsley stems
2 celery stalks
1 red onion
1 teaspoon garlic, minced
1/2 kg diced tomatoes with juice
2 tablespoons olive oil
Salt and pepper
