The 2nd Annual World Health Care Congress Middle East, the premier gathering for sharing top insights and best practices on care delivery, is pleased to announce Chef Osama El Sayed will participate on keynote panel that will discuss the promotion of healthy lifestyles.

Kenyan Chef Cooks Local Dishes with Celebrity Chef Osama El- Sayed
Local Kenyan chef Ali Mandhry had the rare opportunity to present his country’s delicious authentic cuisine live on the Dubai TV on Thursday 15th December 2011.
He cooked Kenyan dishes along with the celebrity chef Osama Elsayed who is the most popular and trusted chef of UAE and also a role model to Ali.
“Ever since I was young, I have always looked upto Chef Osama Elsayed, my late grandfather used to love his shows and followed his cooking recipes on air.
“I have been watching his show ever since I was nine years old, now I got the rare opportunity to not only share a podium but also cook with him, it was an amazing experience and a dream come true”, exclaimed Ali Mandhry.
Ali was awarded by Dubai TV for being at the show and sharing local Kenyan cuisines dishes and recipes with the international media and the world live on chef Osama’s show ‘Ma Osama Atyab’, thus gaining Kenyan cuisine international recognition.
The show attendants and audience loved the dishes he prepared which were: ‘ugali’ served with ‘sukuma wiki’ and ‘karanga’, ‘kuku wa kupaka’ served with ‘wali wa nazi’ and ‘ndizi za kiume za nazi’,
Chef Ali had travelled with interesting ornaments, cooking utensils and cutlery from Kenya to give the studio a Kenyan feel, he also carried with him Kenyan pickles snacks and biting like ‘mabuyu’ and ‘achari’ and local sweets which were all show cased on the show.
“I was received with honour by the Dubai TV team as a Kenyan chef and the great hospitality and treatment accorded to me was just unexplainable they really appreciated my being there and the renowned chef Osama was happy to have me on his show since he is my inspiration and the success behind my career.”

Celebrity TV Chef Osama El Sayed will honor the Egyptian Chefs Association with his presence to support the important Association events taking place in June 2011 at the InterContinental Cairo Citystars.
The Association will be the host for the World Association of Chefs Societies (WACS) Africa & Middle East Forum from Monday 13 till Wednesday 15 June.
Chef’s delegates of the WACS Forum will partake in a tourism promotion among chefs worldwide with the slogan “Support Your Chefs Colleagues in Egypt by Making Egypt Your Next Tourist Destination”.

Interview with Chef Osama El Sayed during Hace'09 exhibition
Celebrity TV Chef Osama El Sayed visited Egypt during Hace'09 exhibition. Violeta Salama met with Chef Osama to talk about his aspirations and what it takes to be a good TV Chef.
How is being a TV chef different from working in a kitchen? Is it more hectic or more relaxed?
It is definitely more responsibilities. Firstly, you always have to be 100 % prepared since you are talking in front of a live audience. Everything has to be executed with the utmost precision. Also, as a TV chef you reach people from different demographic segments of the population and you have to be able to relate to all of them. Unlike working in a restaurant where the kitchen is usually pretty much defined, i.e. French, Italian, etc., cooking in front of a camera requires a broader knowledge, since your audience consists of different people looking for diverse culinary expertise. I have programs for everyone, from pregnant women to people with special dietary needs, I try to respond to all of them and help as much as I can in providing beneficial and exciting information.
What made you become a TV chef?
It was by chance! I was a member of the American Culinary Federation and, as such, I needed to get credit points on a social activity. I thought that doing a media appearance either via TV or radio would be a good way of going about that subject, so I started my first TV cooking show back in 1991. My home kitchen became my first show stage and the Arabic-speaking population of the United States my first TV audience!
What is your background prior to your rise to TV stardom?
I started my long journey in Cairo where I first graduated form the Hotel Technical Institute and then apprenticed with the prestigious Nile Hilton Hotel. Later I augmented my culinary knowledge at the renowned Cornell University's School of Hotel Administration and at "L'Academie de Cuisine" in Bethesda, Maryland. While I was living in the United States, I held various jobs, first at the famed Serbian Crown restaurant and later on at Braun's Fine Caterers in Lanham, Maryland, where I served dignitaries in the political and diplomatic communities as well as numerous members of the foreign community.
Do you execute all the work yourself or do you have an assistant hidden behind the stage helping you with your plentiful tasks?
I do have an assistant. After all, there is only so much preparatory work one can do alone during a half hour show!
How do you decide which recipe to chose and follow?
I have an executive producer and a team working with me, suggesting ideas and responding to the public's wishes. We do receive a large amount of requests via emails and we try to comply with our audience's topics of interest. Often the show is also dictated by the seasonal events, such as Ramadan, Eid and Christmas. Lots of people are involved in brainstorming various ideas but at the end of the day it is I who decides on the final content of the show and the recipes selected are from my own collection.
How difficult is it to stand in front of the camera and hear the director shouts: "Roll"? Do you get stage freight?
I am fortunate to have long since established a good relationship with the camera, and so I am spared the dreadful stage freight!
Do they groom you like they do with movie stars, before you go on air?
No! I am my own makeup artist, in that I don't use any make up or require grooming! I like to keep things simple and professional and have the food remain the focus of all the attention!
When you have to chop the tearful onion, how do you go about it without shedding tears in front of the camera?
I have been blessed! The onion has always been my friend and luckily has never, even prior to my TV career, caused me any discomfort!
How do you avoid belittling your audience with your superior cooking techniques?
The public is who made me and without it and its continuous support I wouldn't be here right now! You don't bite the hand that feeds you! I keep a down to earth approach when dealing with my fans in and out of the studio.
Who in your opinion are the best TV chefs and why do you appreciate their work?
All are good; it only depends on your personal preferences. I like that there is such a great variety of TV chefs, both female and male, presenting a multitude of cuisines and cooking styles. In this way, our profession receives wider exposure and as for the audience, each devotee gets a chance to find what he/she is looking for. We all love different food, so why restrict ourselves to one type of TV chef and his craft, when we have the opportunity to profit from many?
Is there any program, existing or new which you would like to work on?
Yes. For sometimes now I have wanted to host a show on Arabic food but in English language.
Why do you think TV cooking shows became so popular over the past years?
Because they are informative and entertaining at the same time! Food plays an important role in our lives; after all, we eat tree times a day and that is a lot of time spent between shopping for food, cooking and eating. So people who love to cook watch us for the educational value and the ones who don't have the time or the desire to cook, enjoy our shows daydreaming that perhaps one day, they will also be capable of creating a sumptuous meal!
Would you ever consider going back to working in a commercial kitchen again?
I consider myself still working in an commercial kitchen. I still follow the same process, do the same preparatory work and cook the meals as if I would serve them at a restaurant.
Are your cooking shows real live shows?
It is always a live show. What you see is what you get. If I make a mistake, you will be out there witnessing it; there is no editing or repeating. The phone calls I receive during the show are real and my answers have not been rehearsed or taped before. It is all very dynamic.
What do you think TV chefs or celebrity chefs contribute to the chef's profession or society?
Television is a powerful mode of communication and if used correctly can be a source of valuable information for the public. That is why as TV chefs we have an obligation to provide accurate information. We always have to tread step carefully since the reputation of the culinary profession often depends on the knowledge we present.
Any word of advice for aspiring TV chefs?
Learn your profession thoroughly and wisely. Learn how to become a good chef before you decide to become a TV chef. Once on TV you have an opportunity to influence your viewers and it is up to you, your experience and integrity to transmit the right kind of message to your audience. Don't ever take that responsibility lightly!

Chef Osama El- Sayed is always keen to show the benefits of the elements that are usually used in the kitchen. One of these elements is the (Cranberry) that can be used to make a fresh juice or to make a cake and other types of desserts. About the benefits of the cranberry, the scientists said:
1. Improve the body's circulatory system.
2. A daily glass of cranberry juice will treat diseases like cystitis.
3. Provide relief for asthma patients.
4. Condensed tannins in cranberries can inhibit the oxidation of bad cholesterol and as a result protects body against atherosclerosis.
5. Tannins are also considered an important contributor to a healthy heart.
6. Acts as bactericide and affects the acidity of the urine. In effect, it disrupts the development of kidney stone formation.
The Uses of Cranberries
1. Asthma Attack
to overcome an asthma attack, cranberries can be used. Crush the berries; boil it in distilled water and skin. This is effective relief from an attack since the berries contain active ingredients similar to drugs prescribed by your doctors to control asthma.
2. Urinary Tract Infection
As known, the juice has been long known to treat this disease. This is because the juice reduces the number of bacteria adhering to the body's urinary tract lining. A study among elderly patients suggested a 50% reduction of infection among patients who drank 300 ml of cranberry juice everyday for over 6 months. A daily portion of cranberries would also help in treating the disease.
3. Reduces Cholesterol
Laboratory results have also shown that cranberry extract reduces the oxidation of "bad cholesterol". This helps promote healthy heart.
4. Prevent Ulcers
new studies have shown the ability of this fruit has the ability to prevent peptic ulcer by inhibiting the adhesion of bacteria to certain parts of the stomach.
5. Anti-Aging
An exciting new research has shown that cranberries could help protect the brain from neurological damage.

Chef Osama El-Sayed was one of the judges ofTHE MLA BLACK BOX CULINARY CHALLENGE 2010 which is organized by Meat & Livestock Australia (MLA) and other co-sponsors sponsors-who have successfully organised over 77 Black Box Competitions in the Asian region since 1996- and endorsed by WACS, the World Association of Chefs Societies and supported by the Emirates Culinary Guild
The aim of the MLA Black Box Culinary Challenge is to encourage young professionals to work and compete in a team environment to display their skills and talents in a “hands-on” outside catering situation.
A team consists of a Team Chef/Manager (no age restriction) and three young chefs (below 35 years) who are allowed represent a hotel property, airlines caterers and professional culinary schools
The event in Dubai will be hosted by the Madinat Jumeirah.
Yesterday was the TEAM BRIEFING; all teams have been presented with a box of identical ingredients (which are compulsory) from which they will have one hour to develop a four course menu comprising (soup- starter- main course- dessert).
Chef / Osama El-Sayed will be one of the competition judges In partnership with other three of the most professional and famous chefs, who will evaluate the participated teams dishes considering a lot of factors such as: the maximum use of the meat cuts, creativity, recipe and menu compilation, the arrangement of materials for trouble-free working and service and for safe, the correct basic preparation of food, corresponding to today’s modern culinary art, applying the Appropriate cooking techniques, clean arrangements, with no artificial garnishes and no time-consuming arrangements and The typical taste of the food should be preserved. It must have appropriate taste and seasoning. In quality, flavour and colour, the dish should conform to today’s standards of nutritional values.
About awards, each team member will receive a certificate of participation. MLA Black Box Culinary Challenge Gold, Silver or Bronze Awards according to points scored. In addition, the top three teams with the highest scores will be awarded the following:

With several popular TV cookery shows under his pinny, Cairo born culinary guru Osama El Sayed has taken the USA by storm and is now becoming Dubai's answer to Jamie Olivier, with his hands on TV program Maa Osama… Atyab (It's More Delicious with Osama). "I had my own studio in my house where I used to shoot cookery show and aired them on MBC for almost 12 years. I had shows in New York, Detroit and Washington. Now I've had my show on Dubai TV since Ramadan 2004."
Commenting about Gordon Ramsay he said that Gordon Ramsay does his cooking in a liberated way.
